Utilize leftover fruit cake for a decadent ice cream treat.
Ingredients:
  • 1 litre vanilla ice-cream, softened
  • 47.50 gm dark choc bits
  • 62.50 ml red glace cherries, halved
  • 750g fruit cake, thinly sliced
  • warmed custard, to serve
Instructions:
  • Prepare a 4cm-deep, 28cm x 18cm slice pan by greasing it and lining it with baking paper, leaving a 4cm overhang on both long ends. In a large bowl, mix together the ice-cream, choc bits, and cherries until well combined.
  • Place half of the cake slices neatly in the pan, trimming if needed. Spread the ice-cream mixture over the cake slices. Finish by adding the remaining cake slices on top. Cover the pan with plastic wrap.
  • Chill the pan in the freezer for about 1 hour until the ice-cream is firm. Slice into 8 pieces and enjoy with custard.
