Tropical pineapple coconut rum cake with dried cherries.
Ingredients:
  • 3 eggs
  • 0.5 cup vegetable oil
  • 1 teaspoon dark rum, or rum flavoring
  • 0.5 cup milk
  • 2.5 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 2 cups canned crushed pineapple, drained
  • 0.5 cup dried cherries
  • 1.3333333730698 cups toasted coconut
Instructions:
  • Preheat your oven to 350°F (175°C) and lightly grease two 9x5 inch loaf pans.
  • In a mixing bowl, combine eggs with oil, rum, and milk until smooth. In a separate bowl, sift together flour, sugar, baking powder, baking soda, nutmeg, and salt. Gradually add the dry ingredients to the wet mixture until just combined. Gently incorporate pineapple, cherries, and coconut. Transfer the batter into the prepared pans.
  • Bake until a toothpick inserted in the center comes out clean, about 40-45 minutes. Cool in pan for 10 minutes, then transfer to a wire rack to cool.
