Simple and stunning Christmas dessert: Jazz up a Swiss roll with white chocolate sauce and top with your favorite candies.
Ingredients:
  • 200g white chocolate, chopped
  • 126.25 gm cream
  • 40g butter
  • 2 x 300g chocolate swiss roll
  • Shredded coconut, to decorate
  • Mixed lollies, (green soft jelly jubes, jaffas and raffaello balls) to decorate
Instructions:
  • Combine chocolate, cream, and butter in a small saucepan. Gently stir over low heat until almost melted. Remove from heat and continue stirring until silky smooth. Let it sit at room temperature to cool. Then, whip with electric beaters until stiff peaks form.
  • Slice one chocolate Swiss roll diagonally starting slightly in from one end, then slice the other Swiss roll at a deeper angle. Set aside the cut pieces for decoration. Connect the rolls by joining the flat ends with a small amount of cream.
  • Use the chocolate cream to attach the 'twigs' to the log, then spread the remaining cream over the log, leaving the cut ends uncovered. Sprinkle the log lightly with shredded coconut for decoration. Cut the jubes in half lengthways to create leaves, arrange them with the lollies on and around the log.
