Christmas Yule log: Chocolate sponge cake rolled with cream, coated in frosting, and adorned with festive candy.
Ingredients:
  • 0.5 cup sifted cake flour
  • 0.25 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup white sugar
  • 3 eggs, separated
  • 0.25 cup milk
  • 0.125 cup confectioners' sugar
  • 1.5 cups whipped cream
  • 2 cups heavy whipping cream
  • 8 (1 ounce) squares semisweet chocolate, melted
  • 0.25 cup butter, softened
  • 0.5 teaspoon green food coloring
  • 8 ounces marzipan
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a 15x10-inch jelly roll pan by greasing it and lining it with waxed paper. Grease the paper as well.
  • Combine and sieve flour, cocoa, baking powder, and salt.
  • Whisk sugar and egg yolks until pale and fluffy on high speed. Then, on low speed, mix in milk and flour mixture into the egg mixture, alternating between the two.
  • Beat egg whites until stiff peaks form. Gently fold 1/3 of the egg whites into the batter, then fold in the rest. Spread batter evenly in the pan.
  • Bake the cake in the preheated oven for 12 minutes until it is set.
  • Sprinkle a clean cloth with confectioners' sugar, then place the cake on it. Gently peel off the waxed paper and trim the edges of the cake. Roll up the cake from a long side like a jelly roll. Let it cool on a wire rack, seam-side down, for 30 minutes.
  • Unroll the cake and gently remove the cloth. Spread a luscious layer of whipped cream evenly over the cake, leaving a 1-inch border around the edges. Carefully re-roll the cake. Present it on a serving plate with the seam side down for a beautiful finish.
  • To make the frosting, combine heavy cream, melted chocolate, and butter in a small saucepan. Bring to a boil over medium heat, stirring vigorously until smooth. Remove from heat and let it thicken. Spread the luscious frosting over the cake, covering the top and sides generously.
  • Prepare the garnish: Sprinkle confectioners' sugar on a work surface. Mix food coloring into marzipan until combined. Roll out marzipan to 1/8-inch thickness using a dusted rolling pin. Cut out leaves with a small knife. Decorate the cake with leaves, cinnamon candies, and snowmen. Finish by dusting with confectioners' sugar. Serve and enjoy!
