Whip up some Christmas-themed pikelets using leftover fruit mince to keep the festive spirit alive.
Ingredients:
  • 12 bought pikelets
  • 410g jar fruit mince
  • 40ml (2 tbsp) brandy
  • Vanilla ice-cream, to serve
Instructions:
  • Preheat oven to 150°C to create the perfect cooking environment.
  • Cover the pikelets in foil and bake in the oven for 10 minutes to warm them up delicately.
  • Combine the fruit mince, brandy, and water in a saucepan over medium heat until warmed.
  • Assemble each serving by placing three pikelets on a plate, topping them with a scoop of ice-cream, and spooning warm fruit mince mixture over the top.
