Elevate Christmas leftovers with a gourmet turkey or chicken pate.
Ingredients:
  • 200g cooked chicken
  • 180g ham
  • 125g cream cheese
  • 20.00 ml chopped chives
  • 275ml chicken consomme*
  • 2 gelatine leaves*
  • 8 pink peppercorns*
  • Wedge of cheddar, to serve
  • Good-quality chutney, to serve
  • Watercress leaves, to serve
  • Crusty bread, to serve
Instructions:
  • Combine chicken or turkey, ham, cream cheese, chives, and 100ml consomme in a food processor. Blend until smooth. Transfer the mixture into small serving dishes or 1 large dish and level the top.
  • Chill in the refrigerator, covered with plastic wrap.
  • In a saucepan, warm the remaining 175ml consomme over medium heat until just below simmering. While the consomme heats up, soften the gelatine leaves in cold water for 5 minutes, then squeeze out excess water. Remove the saucepan from the heat, add the gelatine, and stir until dissolved. Let it cool slightly.
  • Remove the covering from the pate and gently press peppercorns onto the surface. Pour a thin layer of consomme mixture on top. Cover it again and refrigerate for 1 hour, or until the jelly sets.
  • Enjoy the pate within 2-3 days, served with cheddar, chutney, watercress, and crusty bread for a delightful ploughman's lunch.
