Christmas pudding popsicles

Indulge in festive chocolate pudding popsicles for a delightful holiday treat.
Ingredients:
  • 900g Double Thick Custard Rich Chocolate
  • 80g (1/2 cup) honey-roasted nuts, finely chopped
  • 100g (1/3 cup) fruit mince
  • 50g (1/3cup) dried cranberries, chopped
  • 40.00 ml brandy or rum (optional)
  • 200g dark chocolate, chopped
  • 100g white chocolate, chopped
  • 20g (1/4 cup) desiccated coconut
  • Silver cachous, to decorate
Instructions:
  • Combine the custard, nuts, fruit mince, cranberries, and brandy or rum (if desired) in a large bowl, stirring well.
  • Portion out the custard mixture evenly into twelve 80ml (1/3 cup) popsicle moulds. Place a popsicle stick in the center of each mould. Freeze overnight or until firm (6-8 hours).
  • Take the popsicles out of the freezer, unmould them onto a tray lined with baking paper, and place them back in the freezer promptly.
  • Divide the chocolate into two microwave-safe bowls. Microwave each bowl on Medium for 30-second intervals, stirring with a metal spoon until melted. Allow it to cool slightly.
  • Drizzle each popsicle with rich chocolate using 2 piping bags, then sprinkle with coconut and/or shimmering cachous for a delightful decoration.
