Delicious instant fruit cake baked in a festive wreath shape for immediate indulgence or enhanced flavor over time.
Ingredients:
  • 1.5 cups raisins
  • 1 cup red and green candied cherries
  • 0.75 cup dates, pitted and chopped
  • 0.75 cup candied pineapple, diced
  • 0.75 cup chopped walnuts
  • 0.5 cup flaked coconut
  • 3 cups all-purpose flour
  • 1 cup butter
  • 1.25 cups white sugar
  • 1 teaspoon lemon zest
  • 2 teaspoons lemon juice
Instructions:
  • Preheat the oven to 300°F (150°C) and prepare a tube pan by lining it with two layers of brown paper or parchment and greasing it generously.
  • Combine flour, baking powder, and salt in a large bowl. Add raisins, dates, cherries, pineapple, walnuts, and coconut, mixing until all fruit is coated.
  • In a separate bowl, beat together butter and white sugar until creamy. Mix in lemon zest, lemon juice, and eggs until well combined. Gently fold in the fruit mixture. Pour the batter into the prepared pan.
  • Bake for 2 hours or until a toothpick inserted comes out clean. Allow to cool completely on a wire rack.
