Satisfying beef and Guinness pie, comforting for cold evenings.
Ingredients:
  • 36.40 gm olive oil
  • 800g No Added Hormones Beef Chuck Steak or Gravy Beef, cut into 3cm pieces
  • 12 baby onions or shallots, peeled
  • 2 small carrots, peeled, thinly sliced
  • 2 celery sticks, thinly sliced
  • 35g plain flour
  • 440ml can Guinness
  • 375ml beef stock
  • 2 rosemary sprigs
  • 4 thyme sprigs
  • 2 dried bay leaves
  • 2 sheets frozen puff pastry, just thawed
  • 1 Free Range Egg yolk
  • 20.60 gm milk
Instructions:
  • In a large ovenproof saucepan, heat up half of the oil over high heat. Add half of the beef and sear for 5 mins until browned all over, turning occasionally. Transfer to a heatproof bowl. Repeat with the remaining beef.
  • Heat the remaining oil in the pan and sauté the onions or shallots, carrot, and celery until light brown, about 5 minutes. Add the beef back to the pan with garlic and flour, stirring well for 2 minutes. Pour in the Guinness, stock, rosemary, thyme, and bay leaves, bring to a boil, then simmer covered for 1 1/2 hours until the beef is tender. Uncover and cook for another 30 minutes until the sauce thickens. Season to taste.
  • 1. Preheat your oven to 200°C. 2. Transfer the beef mixture into an 8-cup (2L) ovenproof dish. 3. Lay a pastry sheet on a clean work surface. 4. In a small bowl, whisk together egg yolk and milk, then season. 5. Brush a light coating of the egg mixture over the pastry sheet. 6. Top with the second pastry sheet and brush with more egg mixture. 7. Place the pastry over the beef mixture in the dish, trimming any extra pastry. 8. Create leaf shapes from the excess pastry and decorate the pie with them.
  • Bake until the pastry turns a beautiful golden brown and puffs up, about 30-35 minutes.
