Favorite weeknight meal: Quick, easy, and low-fat chicken dish.
Ingredients:
  • 1 bunch broccolini
  • 500g chicken tenderloins
  • 196.88 gm 99% fat-free caesar salad dressing
  • 250.00 ml fresh basil leaves, roughly chopped
  • 1 medium iceberg lettuce, cut into 8 wedges
  • 1 large avocado, thickly sliced
Instructions:
  • 1. Bring a large pot of water to a boil on high heat. 2. Boil broccolini for 2 minutes until vibrant green and slightly tender. 3. Drain and immediately place in a bowl of ice water to cool. 4. Drain again and cut the broccolini in half.
  • Preheat a greased barbecue plate or chargrill over medium-high heat. Season chicken with salt and pepper and grill for 3 minutes on each side until fully cooked. Transfer the chicken to a plate, cover with foil, and let it rest for 5 minutes before serving.
  • In a small bowl, combine dressing and half of the basil and stir well.
  • On a platter, artfully place the lettuce wedges, avocado, and broccolini. Sprinkle with the remaining basil, then top with chicken. Serve with dressing.
