Upgrade your chicken chili with hominy and tomatoes for a delicious twist!
Ingredients:
  • 2 pounds boneless, skinless chicken thighs
  • 2 cans (14 1/2 ounces each) diced tomatoes with green chilies, undrained
  • 1 can (15 ounces) tomato sauce
  • 1 envelope (1 1/4 ounces) mild chili seasoning mix
  • 2 cans (15 1/2 ounces each) hominy, drained
  • Sour cream, if desired
  • Cilantro, if desired
Instructions:
  • Add the chicken to a 3 1/2- to 4-quart slow cooker and cover it with a mixture of tomatoes, tomato sauce, and chili seasoning.
  • Slow cook on low for 7 to 9 hours until the chicken is no longer pink in the center.
  • Break up the chicken with a gentle stir, then add the hominy. Cover and simmer on low for 15 minutes until everything is heated through. Garnish your chili with sour cream and cilantro before serving.
