Rich and flavorful slow cooker chili chicken with dark meat and hominy for a satisfying twist. Just 5 minutes prep for an easy and delicious meal.
Ingredients:
  • 2 pounds boneless skinless chicken thighs
  • 2 cans (14 1/2 ounces each) diced tomatoes with green chilies, undrained
  • 1 can (15 ounces) tomato sauce
  • 1 packet (1 oz) Old El Paso™ Chili Seasoning Mix
  • 2 cans (15 1/2 ounces each) hominy or Posole, drained
  • Sour cream, if desired
  • Cilantro, if desired
Instructions:
  • Add the chicken to a 3 1/2- to 4-quart slow cooker, then combine the tomatoes, tomato sauce, and chili seasoning before pouring the mixture over the chicken.
  • Cook the chicken covered on low heat for 7 to 9 hours, or until the chicken juices run clear and the thickest pieces are no longer pink in the center.
  • Break up chicken by stirring, then mix in hominy. Cook covered on low heat setting for 15 minutes until heated through. Serve chili topped with sour cream and cilantro. Note: Recipe is suitable for slow cookers with heating elements in the side and bottom. Follow manufacturer’s guidelines for other types of slow cookers.
