Spicy Chunky Chili recipe to spice up your mealtime.
Ingredients:
  • 250g gravy beef, cut into 2.5cm pieces
  • 1 large brown onion, finely chopped
  • 1 garlic clove, crushed
  • 10.00 gm ground cumin
  • 2 tsp ground coriander
  • 1/2 tsp chilli powder
  • 332.50 ml Italian tomato passata sauce
  • 400g can red kidney beans, drained, rinsed
  • 125g can four bean mix, drained, rinsed
  • 82.50 ml chopped fresh coriander leaves
  • 1 fresh long green chilli, finely chopped
  • 30g corn chips, to serve
Instructions:
  • - Heat oil in a medium frying pan over high heat until sizzling. Cook beef for 3 minutes, or until browned, then transfer to a bowl. - Reduce heat to medium and add onion, cooking and stirring for 5 minutes until softened. - Return beef to the pan and stir in garlic, cumin, ground coriander, and chili powder for 1 minute until fragrant. - Add passata, beans, and 1 1/2 cups cold water, stirring well to combine. Season with salt and pepper. - Bring to a boil, then reduce heat to medium-low, cover, and simmer for 1 hour and 15 minutes until the beef is tender.
  • Mix chopped coriander, tomato, and chili in a bowl.
  • Divide the savory beef and fragrant coriander mixtures into individual bowls. Enjoy with crispy corn chips.
