Spicy Mexican burgers with chunky guacamole.
Ingredients:
  • 600g beef mince
  • 2 green onions, finely chopped
  • 1 garlic clove, crushed
  • 1 tsp dried oregano
  • 2.50 gm smoked paprika
  • 20.80 gm extra-hot chilli sauce
  • 40.00 ml chopped fresh coriander leaves
  • 4 butter lettuce leaves
  • 165.00 ml grated tasty cheese
  • 4 crusty bread rolls, split
  • Bottled tomato salsa, to serve
  • Extra coriander sprigs, to serve
  • 1 avocado, chopped
  • 21.00 gm lime juice
  • 1 small tomato, seeded, finely chopped
Instructions:
  • Mix the mince, onion, garlic, oregano, cumin, paprika, chilli sauce, and coriander in a bowl. Season with salt and pepper. Divide into 4 equal portions and roll into balls. Flatten each into 1cm-thick patties. Chill in the refrigerator for 1 hour on a baking paper-lined plate.
  • Preheat oil on a barbecue hotplate or large frying pan over medium heat. Sear patties for 4 to 5 minutes on each side until golden brown and cooked through. Transfer to a plate and tent loosely with foil for 5 minutes before serving.
  • Prepare the Guacamole by mashing avocado with lime juice until well mixed. Gently fold in the tomato, then season with salt and pepper to taste.
  • Assemble lettuce, patties, guacamole, and cheese on bottom half of rolls. Add tomato salsa, coriander sprigs, and top with remaining roll halves. Enjoy!
