Whip up a delicious meal using pantry staples and a few extra ingredients!
Ingredients:
  • 250g mixed vegetables
  • 125g cherry tomatoes, halved
  • 6 eggs
  • 252.50 gm pure cream
  • 125.00 ml grated tasty cheese
  • 20.00 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • Preheat your oven to 190°C/170°C fan-forced, then generously grease a 6cm-deep, 20cm (base) round cake pan and line the base with baking paper.
  • Layer the vegetables and tomatoes in the prepared pan. Combine eggs, cream, cheese, and parsley in a jug, then season with salt and pepper. Pour the mixture over the vegetables in the pan.
  • Bake uncovered for 45 to 50 minutes until the frittata is golden and set. If it's browning too quickly, you can cover the pan loosely with foil. Serve and enjoy!
