Fall apple cupcakes made with Betty Crocker™ yellow cake mix, apple cider, and fresh grated apple. A must-try dessert!
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 cup grated peeled apple
  • 1/2 teaspoon apple pie spice
  • 4 oz (half of 8-oz package) cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 cup apple cider
  • 24 red apple chips (from 2.5-oz bag)
Instructions:
  • Preheat your oven to 350°F (or 325°F for dark or nonstick pans) and line 24 regular-size muffin cups with paper baking cups.
  • In a large bowl, use an electric mixer to blend cake mix, water, oil, and eggs on low for 30 seconds. Increase speed to medium and beat for 2 minutes, scraping the bowl as needed. Carefully fold in apple and apple pie spice. Divide batter into muffin cups evenly.
  • Bake for 20 to 22 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes, then remove from pans and transfer to cooling racks to cool completely.
  • In a large bowl, use an electric mixer on medium speed to blend cream cheese and butter until creamy. Gradually add powdered sugar on low speed until smooth. Mix in vanilla. Spread the frosting on cupcakes.
  • In a small saucepan, bring cider to a boil over medium-high heat. Let it boil uncovered for 20 minutes until it reduces to 1/4 cup. Drizzle the concentrated cider over the cupcakes and let them cool for 10 minutes. Finish by topping each cupcake with an apple chip.
