Ingredients:
  • 2 tablespoons extra virgin olive oil
  • 1 1/2 cups basmati long grain white rice
  • 1 clove garlic, minced
  • 2 1/4 cup water
  • 1 teaspoon salt
  • Zest of one lime
  • 3 tablespoons lime juice
  • 1 cup lightly packed chopped cilantro, leaves and tender stems
Instructions:
  • In a medium saucepan over medium-high heat, heat olive oil. Add raw rice and stir well to coat with the fragrant oil. Continue to cook, stirring occasionally, until the rice turns a golden brown. Introduce garlic and sauté for an additional minute.
  • To infuse flavors and cook the rice perfectly, combine water, salt, and fresh lime zest in a pot with the rice. Allow it to come to a lively boil, then cover and reduce the heat to maintain a gentle simmer. Let it cook for 15 minutes without stirring, following the instructions on your rice package. Remove from heat and rest for 10 minutes. Fluff the rice using a fork before serving.
