Lush wild cilantro pesto elevates any dish, perfect for chicken or tuna. Overflowing with flavor, indulge in this versatile sauce.
Ingredients:
  • 3 fresh red chile peppers
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 pinch kosher salt
  • 0.5 cup malt vinegar
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 3 tablespoons soy sauce
  • 1 teaspoon lime juice
  • 1 bunch cilantro, chopped
  • 1 green onion, chopped
Instructions:
  • Trim the stem off the chile peppers, deseed using a thin knife, and keep them whole. Toast in a skillet over medium-high heat until skins blacken and loosen, about 10 minutes. Peel off 1/4 of the skin to check doneness. Transfer to a bowl, cover with plastic wrap, cool for 15 minutes, then peel and discard skin. Chop the peppers and set aside.
  • In a skillet over medium heat, warm the sesame oil. Add garlic and cook for 2 minutes until softened. Increase heat to medium-high, add chopped peppers and salt. Cook until sizzling, about 1 minute. Pour in vinegar, brown sugar, and fish sauce. Bring to a boil, then simmer on medium-low for 10 minutes.
  • Transfer the mixture to a blender and incorporate soy sauce, lime juice, cilantro, and green onion. Blend until smooth. Serve promptly.
