Succulent braised beef in savory chile pepper sauce served in warm corn tortillas with zesty cilantro, lime, and onion.
Ingredients:
  • 5 dried Anaheim chile peppers, stemmed and seeded
  • 5 guajillo chile peppers, stemmed and seeded
  • water to cover
  • 0.25 onion
  • 1 tablespoon mixed spices, or more to taste
  • 1 tablespoon salt, or to taste
  • 3 pounds cubed beef stew meat
  • 6 bay leaves
Instructions:
  • In a saucepan, simmer Anaheim and guajillo peppers in water until tender, for about 15 minutes. Let them cool for 5 minutes before using.
  • In a blender, combine chiles and water with onion, mixed spices, and salt. Blend until smooth.
  • In a large pot, combine stew meat with pureed chile mixture and bay leaves. Simmer gently over medium-low heat until the meat is meltingly tender, 3 to 5 hours.
