Create mouthwatering homemade birria tacos effortlessly.
Ingredients:
  • 5 cups birria consomé
  • 4 tablespoons olive oil, divided
  • 16 (4- to 5-inch) corn tortillas
  • 4 cups birria meat
  • 12 ounces (350g) freshly grated cheddar cheese
  • 1 medium white onion, finely diced
  • 1 small bunch fresh cilantro, finely chopped
  • 4 limes, cut in wedges
Instructions:
  • Warm up 4 cups of consomé in a saucepan over medium heat until it simmers with the lid on.
  • Prepare the tacos: Heat olive oil in a large frying pan over medium heat. Dip a tortilla in consomé and coat both sides. Fill with 2 tablespoons birria meat and 1 tablespoon cheese. Place in the pan unfolded. Once the bottom is golden, fold in half. Cook until cheese is melted and tortilla is golden brown. Repeat with remaining tacos, adding more oil as needed.
  • Plate the tacos and top with onions, cilantro, and lime wedges. Serve with warm consomé for dipping. Leftovers can be refrigerated for up to 3 days. Reheat tacos on a pan over medium-low heat for 2-3 minutes each side. Warm consomé in a saucepan. Enjoy! Remember to leave a rating if you loved the recipe!
