Spicy cherry tomato salsa with onions, cilantro, and mint - a zesty addition to your Mexican feast!
Ingredients:
  • 1.5 pounds cherry or grape tomatoes, diced
  • 0.5 cup finely diced onion
  • 1 jalapeno chile peppers, seeded and minced
  • 1 serrano chile pepper, seeded and minced
  • 2 cloves garlic, minced
  • 2 tablespoons lime juice
  • 0.25 teaspoon dried oregano
  • 1 pinch cayenne pepper, or more to taste
  • 1 teaspoon salt, or to taste
  • 1 pinch white sugar
  • 2 tablespoons minced fresh mint leaves
  • 0.5 bunch fresh cilantro, chopped
  • salt to taste
Instructions:
  • Place the tomatoes in a strainer and let them drain for 15 minutes.
  • In a large bowl, mix together tomatoes, onion, jalapeno pepper, serrano pepper, and garlic. Drizzle lime juice on top. Add oregano, cayenne pepper, salt, sugar, mint, and cilantro. Chill in the refrigerator for 1 hour. Adjust seasoning with salt as needed.
