Cinnamon and honey frozen yoghurt with blueberry sauce

Indulge in a luscious frozen yogurt treat drizzled with fresh blueberry sauce this summer.
Ingredients:
  • 800g Greek-style natural yoghurt
  • 60mls (1/4 cup) honey
  • 5.00 gm ground cinnamon
  • 8.80 gm vanilla essence
  • 1 orange
  • 80mls (1/3 cup) water
  • 55g (1/4 cup) sugar
  • 150g fresh blueberries or frozen blueberries
Instructions:
  • Combine yogurt, honey, cinnamon, and vanilla essence in a food processor. Blend until smooth. Transfer the mixture to an airtight container and freeze for 3 hours, or until nearly firm.
  • Using a metal spoon, swirl the yogurt mixture and transfer it to the food processor. Blend until smooth. Transfer the mixture back to the airtight container and freeze for an additional 3 hours, or until it is fully set.
  • For the blueberry sauce: Use a vegetable peeler to remove the rind from half of an orange, making sure to remove the white pith. Cut the rind into thin strips or use a zester for convenience. Squeeze the orange for its juice.
  • In a small saucepan over medium heat, stir together orange rind strips, orange juice, water, and sugar until the sugar dissolves. Bring to a boil, then simmer uncovered for 5 minutes until slightly reduced. Remove from heat, stir in blueberries, and let cool. Cover and chill in the fridge until ready to use.
  • Before serving, allow the frozen yogurt to thaw in the fridge for around 20 minutes to achieve a soft texture. Top the scoops of frozen yogurt with blueberry sauce before serving.
