Honey and apple sweetened, cinnamon and cumin spiced, fall-inspired slow cooker chicken and potato dish.
Ingredients:
  • 1 (1.5 pound) package small yellow-fleshed potatoes
  • 3 pounds skin-on, boneless chicken thighs
  • 3 small apples, peeled and diced
  • 0.5 medium sweet onion, diced
  • 0.5 cup honey
  • 0.33333334326744 cup applesauce
  • 1 clove garlic, minced
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon ground black pepper
Instructions:
  • Halve any large potatoes.
  • Layer the slow cooker with potatoes at the bottom, place chicken thighs on top of the potatoes, and evenly scatter apples and onions over the chicken.
  • Combine the chicken broth, honey, applesauce, garlic, salt, cinnamon, cumin, and pepper in a bowl, then pour over the chicken mixture.
  • Slow cook the chicken until it turns opaque at the bone and the juices are clear for 4 to 6 hours on Low, or around 3 hours on High. Check for doneness by inserting an instant-read thermometer near the bone, it should register 165 degrees F (74 degrees C).
  • Preheat the oven's broiler with the rack positioned 6 inches below. Line a baking sheet with aluminum foil.
  • Place the skin-side up chicken thighs on a prepared baking sheet after removing them from the slow cooker.
  • Broil until the skin is crispy, about 3 to 5 minutes. Serve alongside potatoes, apples, onions, and sauce.
