Slow-cooked chicken with fresh thyme, apples, sage, and crème fraiche for a comforting and flavorful meal.
Ingredients:
  • 2 tablespoons unsalted butter
  • 2 1/2 to 3 lb boneless skinless chicken thighs
  • Salt
  • 3 shallots, halved
  • 1/4 cup Calvados (apple brandy) or apple cider
  • 1/4 cup Progresso™ reduced-sodium chicken broth (from 32-oz carton)
  • 2 bay leaves
  • 2 or 3 sprigs fresh thyme
  • 2 apples, peeled and cored
  • 1 tablespoon chopped fresh sage
  • 1/4 cup crème fraîche
  • Betty Crocker™ mashed potatoes, as desired
Instructions:
  • Melt butter in a skillet over medium-high heat. Season chicken thighs with salt, then brown them, along with the shallots, on both sides. Transfer chicken and shallots to a slow cooker without fully cooking the chicken.
  • Take the skillet off the heat and pour in the brandy. Put the skillet back on the heat to deglaze by scraping up the brown bits from the bottom. Once all the bits are scraped up, transfer the brandy to the slow cooker.
  • In the slow cooker, combine chicken broth, bay leaves, thyme, and apples. Cook on Low heat setting for 4 hours. Add sage after 3 1/2 hours and crème fraîche just before serving. Serve over mashed potatoes.
