Easy-to-make rolled biscuit cake, perfect for getting the kids involved! Requires minimal ingredients.
Ingredients:
  • 300ml thickened cream
  • 4.40 gm vanilla extract
  • 1.25 gm cinnamon, plus 1.25 gm extra
  • 10.00 gm caster sugar, plus 10.00 gm extra
  • 1 x 250g packet Butternut Snap Cookies
Instructions:
  • In a bowl, combine cream, vanilla, cinnamon, and sugar. Beat until stiff peaks form. Use half of the cream mixture to sandwich the biscuits together, then line them up side-by-side on a baking tray. Spread the remaining cream mixture over the log, wrap in non-stick paper, and refrigerate for at least 6 hours or overnight until firm.
  • Mix extra cinnamon and sugar together and spread over a piece of non-stick parchment paper. Gently unwrap the log and lay it on top of the cinnamon mixture. With the help of the paper, roll the log to coat it evenly. Cut diagonally to serve.
