Chef Brooke McLay of Cheeky Kitchen adores apple pie, especially in pancake form.
Ingredients:
  • 1/4 cup Original Bisquick™ mix
  • 3 tablespoons packed brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 2 tablespoons butter, softened
  • 1 cup Original Bisquick™ mix
  • 1 egg
  • 1 1/8 cups milk
  • 1 teaspoon vanilla
  • 1 tablespoon ground cinnamon
  • 1 can (21 oz) apple pie filling
  • Additional butter, if desired
Instructions:
  • Combine topping ingredients in a small bowl, using a fork to create a crumbly texture. Set aside until ready to serve.
  • In a large bowl, whisk together 1 cup Bisquick mix, egg, milk, and vanilla until just blended. Transfer 1/4 cup of the batter to a small bowl and mix in 1 tablespoon of cinnamon until the batter turns dark. Swirl the cinnamon batter into the remaining vanilla batter one tablespoon at a time.
  • Preheat griddle or skillet over medium-high heat (375°F) and lightly grease with vegetable oil or cooking spray. Pour 1/4 cup of batter for each pancake onto the hot griddle. Cook for about 3 minutes until bubbles appear on top, then flip and cook until golden brown on the other side.
  • In a small microwave-safe bowl, heat the pie filling uncovered on High for 1 to 2 minutes or until warm.
  • Finish off the pancakes with a luxurious pat of butter, a generous spoonful of warm pie filling, and a sprinkle of irresistible streusel topping.
