Citrus cream pastry horns recipe

Make 20 easy and delicious pastry horns with just five ingredients for effortless entertaining!
Ingredients:
  • 2 sheets butter puff pastry, just thawed
  • 2 eggs, whisked
  • 600ml thickened cream
  • 160g (1/2 cup) lemon curd
  • 55g (1/3 cup) pistachio kernels, finely chopped
Instructions:
  • 1. Preheat your oven to 200C and line 2 baking trays with baking paper. 2. Cut pastry sheets into 2.5cm-wide strips. 3. Spray five 9cm-long metal cream horn moulds with oil. 4. Wrap the pastry strips around the moulds, overlapping slightly. 5. Brush the pastry with whisked egg. 6. Bake for 12-15 minutes or until golden. 7. Carefully slide the pastry off the moulds and allow it to cool completely. 8. Repeat with the remaining pastry in 4 batches.
  • Whip cream until soft peaks form, gently fold in lemon curd, and transfer mixture to a piping bag with a 1.5cm round nozzle. Pipe into horns and garnish with finely chopped pistachios. Serve promptly.
