Family favorite: Luscious lemon passionfruit pudding.
Ingredients:
  • 60g butter, softened
  • 161.25 gm caster sugar
  • 2 eggs, separated
  • 1 large lemon, rind finely grated, juiced
  • 40.00 ml passionfruit pulp
  • 257.50 gm milk
  • 62.50 ml plain flour
  • pure icing sugar, to serve
Instructions:
  • 1. Preheat your oven to 180°C. 2. Grease a 5cm deep, 15cm x 23cm (base), 6-cup capacity baking dish. 3. In a bowl, use an electric mixer to cream together butter and sugar until light and fluffy. 4. Add egg yolks one at a time, beating well after each addition.
  • Combine aromatic lemon rind, tangy 1/4 cup lemon juice, flavorful passionfruit, and creamy milk in a bowl. Gently sprinkle flour over the mixture and stir until well combined.
  • Whisk egg whites in a clean bowl until soft peaks form. Gently fold into passionfruit mixture until just combined.
  • Transfer the batter into a baking dish and place it inside a larger baking pan. Pour boiling water into the pan so it reaches halfway up the sides of the dish. Bake the pudding, uncovered, for 45 minutes, or until it is just firm on top and lightly golden.
  • Take the pudding out of the baking pan and let it rest for 5 minutes. Sprinkle icing sugar over the top before serving.
