Sunny-day summer fruit cup dessert.
Ingredients:
  • 8 passionfruit
  • 2 oranges, segmented (see notes), plus 2 tbsp orange juice
  • 55g (1/4 cup) caster sugar
  • 1 egg white
  • 200ml creme fraiche (see note)
  • 60ml (1/4 cup) thickened cream
  • 10 savoiardi biscuits (sponge fingers)
Instructions:
  • Cut a fresh and vibrant passionfruit in half to reveal its luscious pulp. Gently scoop out the tantalizing pulp and transfer it into a bowl. Pour in some refreshing orange juice and sprinkle in precisely 1 tablespoon of sugar. Give it a gentle stir until all the flavors harmonize beautifully.
  • Whisk egg white with an electric mixer until frothy. Slowly add the remaining 2 tablespoons sugar, continuing to whisk for about 1 minute until stiff and glossy.
  • In a large mixing bowl, blend creme fraiche and cream with an electric mixer until stiff peaks form, about 1 minute. Carefully fold in egg white in 3 batches and gently mix in 1 tablespoon of passionfruit mixture using a spatula.
  • Place the orange segments in the glasses, setting aside 4 for later. Add 1 1/2 crumbled sponge fingers to each glass and finish by topping each with 1 tablespoon of passionfruit mixture.
  • Layer half of the creme fraiche mixture into glasses, followed by crumbling the remaining sponge fingers. Add the rest of the creme fraiche mixture, then top each parfait with 2 teaspoons of the passionfruit mixture. Chill for 30 minutes, then drizzle with the rest of the passionfruit mixture and add the reserved segments on top.
