Citrus Poppy Seed Cake Pops

Elevate dessert with zesty citrus flavor in these irresistible poppy seed cake pops using Betty Crocker™ cake mix and frosting.
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Lemon Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 1 cup from 1 tub (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting (from 1-lb container)
  • 3 tablespoons poppy seed
  • 2 teaspoons grated orange peel
  • 2 cups yellow candy melts or coating wafers (12 oz)
  • 2 tablespoons shortening
  • 2 cups orange candy melts or coating wafers (12 oz)
  • 64 paper lollipop sticks
  • Block of plastic foam
Instructions:
  • Prepare and bake the cake mix following the instructions on the box for a 13x9-inch pan, using water, oil, and eggs. Let it cool completely. Line a cookie sheet with waxed paper. Crumble the cake into a large bowl. Stir in the frosting, 2 tablespoons of poppy seed, and orange peel until well combined. Shape the mixture into 1-inch balls and place them on the prepared cookie sheet. Freeze until firm, then store them in the refrigerator.
  • Place yellow candy melts and 1 tablespoon of shortening in a microwavable bowl. Microwave uncovered on Medium (50%) for 1 minute, then in 15-second intervals until melted. Stir until smooth. Repeat the same process with orange candy melts and the remaining 1 tablespoon of shortening. Dip 1 lollipop stick 1/2 inch into the melted candy and insert it halfway into 1 cake ball. Repeat for the remaining cake balls. Refrigerate for 5 minutes on a cookie sheet. Take a few out of the refrigerator at a time. Dip half of the cake balls in the yellow candy and the other half in the orange candy, tapping off excess. Insert the sticks into a foam block. Sprinkle the remaining poppy seeds over the tops and let them set.
