Elevate traditional shortbread cookies with a burst of flavor from orange zest and tangy dried cranberries.
Ingredients:
  • 2 cups all-purpose flour
  • 0.25 teaspoon baking powder
  • 0.125 teaspoon salt
  • 1 cup butter, softened
  • 0.75 cup confectioners' sugar
  • 2 teaspoons vanilla extract
  • 0.5 teaspoon almond extract
  • 1 tablespoon grated orange zest, or more to taste
  • 2 cups sweetened dried cranberries, chopped
Instructions:
  • In a bowl, mix together flour, baking powder, and salt; then set aside. In a large bowl, use an electric mixer to beat butter and confectioners' sugar until smooth. Add vanilla and almond extracts along with orange zest. Gently fold in the flour mixture until just combined. Finally, lightly mix in the cranberries until evenly distributed.
  • Divide the dough in half and shape each portion into 7-inch long logs. Wrap the logs in wax paper or plastic wrap and refrigerate for a minimum of 4 hours.
  • Preheat the oven to 350°F (175°C).
  • Uncover the dough, then slice into 1/2-inch pieces. Place the slices on a baking sheet with 1 inch of space between each.
  • Bake in the preheated oven for about 10 minutes until firm, but not browned.
