Tantalizing lemon curd shortbread cookies are the perfect fusion of sweet and citrus flavors.
Ingredients:
  • 1.5 cups unsalted butter, softened
  • 0.25 cup white sugar
  • 3.5 cups all-purpose flour
  • 1 medium lemon, zested
  • 0.5 cup lemon curd
Instructions:
  • Preheat the oven to a warm 325 degrees F (165 degrees C).
  • Cream together butter and sugar until perfectly combined. Slowly incorporate flour, 1 cup at a time. Stir in lemon zest until fully incorporated.
  • Roll dough into smooth 1-inch balls, gently press an indent using your thumb in the center of each, and fill with a dollop of zesty lemon curd. Place on an ungreased cookie sheet.
  • Bake until edges are golden, 15 to 20 minutes. Then let cool on the sheet for 1 minute before transferring to a wire rack to cool completely.
