Delicate thumbprint cookies filled with zesty lemon curd and fragrant lavender - a match made in dessert heaven!
Ingredients:
  • 1 cup unsalted butter, softened
  • 0.33333334326744 cup packed brown sugar
  • 0.33333334326744 cup white sugar
  • 2 large egg yolks
  • 2 teaspoons dried lavender
  • 1 teaspoon almond extract
  • 2.25 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 0.33333334326744 cup lemon curd
  • 2 tablespoons honey
Instructions:
  • Prepare two baking sheets by lining them with parchment paper.
  • In a bowl, blend together butter, brown sugar, and white sugar until creamy. Add egg yolks, lavender, vanilla, and almond extract, and mix until well combined.
  • Combine flour, cornstarch, and salt in a separate bowl, then add the mixture to the butter and mix until fully combined.
  • Shape dough into 1-inch balls and space 2 inches apart on baking sheets. Press your thumb (or use the bottom of a shot glass) to make a well in the center of each cookie. Fill each well with lemon curd. Chill baking sheets in the refrigerator for 20 minutes.
  • Preheat your oven to 375°F (190°C).
  • Take the baking sheets out from the refrigerator and delicately drizzle honey over each cookie.
  • Bake in the preheated oven for 10 to 12 minutes until the cookies start to turn golden brown. Let them cool on the baking sheet for a few minutes before transferring to a cooling rack.
