Summer-inspired, light and refreshing loaf.
Ingredients:
  • 2.6666667461395 cups all-purpose flour
  • 1.5 teaspoons baking soda
  • 1 teaspoon baking powder
  • 0.75 teaspoon salt
  • 0.5 cup butter, softened
  • 1.75 cups white sugar
  • 1.5 cups mashed avocado
  • 2 tablespoons lemon juice
  • 0.75 cup milk
  • 2 tablespoons dried lavender
  • 1 tablespoon grated lemon zest
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease and flour 2 9x5 inch loaf pans.
  • Combine flour, baking soda, baking powder, and salt in a bowl. Set aside. Cream together butter and sugar until light and fluffy. Add eggs one at a time, blending well after each addition. Mix in avocado and lemon juice with the last egg. Alternate adding flour mixture and milk, mixing until just combined. Gently fold in lavender and lemon zest. Pour batter into prepared pans. Enjoy!
  • Bake in the preheated oven for about 1 hour or until a toothpick inserted into the center comes out clean. Let cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
