Lemon lavender cookies, cut into shapes and optionally brushed with egg white, sprinkled with lavender and sugar before baking or simply dusted with confectioners' sugar post-bake.
Ingredients:
  • 1.5 cups butter, softened
  • 1 extra large egg
  • 1 extra large egg yolk
  • 3.5 teaspoons finely grated lemon zest
  • 2.5 teaspoons crushed dried lavender flowers
  • 0.25 teaspoon vanilla extract
Instructions:
  • Cream butter and sugar in the work bowl of a stand mixer until creamy. Add egg, egg yolk, lemon zest, lavender, and vanilla extract at low speed. Gradually mix in flour, 1 cup at a time, until a workable dough forms. Shape dough into a ball, cover with plastic wrap, and chill in the refrigerator for 3 hours.
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • On a floured surface, roll out the dough to a 1/8-inch thickness. Use cookie cutters to shape the dough, then transfer the cookies to baking sheets.
  • Bake in the preheated oven for 9 to 10 minutes until firm. Let cookies cool on sheets for 2 to 5 minutes before moving to wire racks to finish cooling.
