Buttery shortbread triangles with a zesty lemon drizzle for the perfect sweet touch.
Ingredients:
  • 3/4 cup butter or margarine, softened
  • 1/4 cup granulated sugar
  • 2 cups Gold Medal™ all-purpose flour
  • 1 1/2 teaspoons grated lime peel
  • 1 1/2 teaspoons grated orange peel
  • 1 cup powdered sugar
  • 1 to 2 tablespoons lime juice
Instructions:
  • - Preheat oven to 350°F. - In a large bowl, use an electric mixer to beat butter and granulated sugar until light and creamy, about 2-3 minutes. - Add flour, lime peel, and orange peel, and mix on low speed until blended. - Shape the mixture into a ball.
  • Roll the dough into an 8x6-inch rectangle on a lightly floured surface until it's about 1/2 inch thick. Smooth out any cracks around the edges by pressing them gently. Cut the rectangle into 12 (2-inch) squares, then cut each square diagonally to create triangles. Arrange the triangles on an ungreased cookie sheet, ensuring they are spaced 1/2 inch apart.
  • Bake for 12 to 17 minutes until edges start to brown. Allow to cool for 1 minute then transfer from baking sheet to wire rack. Let cool completely for about 15 minutes.
  • Combine powdered sugar and lime juice in a small bowl until you have a smooth and drizzle-worthy glaze. Drizzle over cookies.
