Elevate holiday turkey with a zesty citrus brine for juicy, flavorful meat every time.
Ingredients:
  • 1 (12 pound) fresh, whole, bone-in skin-on turkey, rinsed and patted dry
  • 1 cup salt
  • 1 medium onion, cut into wedges
  • 1 medium orange, cut into wedges
  • 1 medium lemon, cut into wedges
  • 3 cloves garlic
  • 4 large bay leaves
  • 1 tablespoon dried thyme
  • 1 tablespoon ground black pepper
  • 1.5 gallons cold water
Instructions:
  • Season the turkey generously with salt, making sure to cover the entire surface. Transfer any remaining salt to a large stainless steel or enameled stockpot.
  • Place fragrant ingredients like onion, orange, lemon, garlic, bay leaves, thyme, and pepper in the pot. Add the turkey and cover with cold water. Refrigerate for 8 hours to overnight for maximum flavor infusion.
  • Before cooking, discard the brine from the turkey. Rinse the turkey, pat it dry, and place it in a roasting pan. Refrigerate uncovered for 2 to 3 hours. Cook the turkey by roasting, grilling, or deep-frying using your preferred recipe.
