Citrus-infused brine elevates Thanksgiving turkey to unforgettable heights.
Ingredients:
  • 1 orange, sliced
  • 1 lemon, sliced
  • 1 lime, sliced
  • 1 (12 fluid ounce) can frozen orange juice concentrate, thawed
  • 1 tablespoon dried thyme
  • 1 tablespoon ground black pepper
  • 3 cloves garlic
  • 2 bay leaves
  • 1 cup kosher salt
  • 1.5 gallons water
Instructions:
  • In a large stockpot, mix together the orange juice concentrate, orange slices, lemon slices, lime slices, thyme, pepper, garlic, bay leaves, salt, and water. Bring to a boil, then let it cool to room temperature.
  • Prepare the turkey by washing and drying it thoroughly, ensuring the removal of any innards. Place the turkey breast down in the brine, making sure to fill the cavity completely. Refrigerate the bucket with the turkey for 1 to 2 days to marinate. When ready to cook, carefully remove the turkey, drain and discard excess brine, and pat dry.
  • Cook the turkey to your liking, saving the drippings for making gravy. Note that brined turkeys cook 20 to 30 minutes quicker.
