Citrus-Ginger Chicken

Zesty citrus and warm ginger elevate this quick and delicious skillet chicken dish. Ready in just 30 minutes!
Ingredients:
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 2 tablespoons honey
  • 1 teaspoon finely chopped gingerroot
  • 1 teaspoon chopped fresh or 1/4 teaspoon dried thyme leaves
  • 1/4 teaspoon salt
  • 1/4 teaspoon black and red pepper blend
  • 4 boneless, skinless chicken breast halves (about 1 1/4 pounds)
  • 1 tablespoon butter or margarine
  • 1 medium seedless orange, peeled and cut into slices
  • Additional fresh thyme leaves, if desired
Instructions:
  • Combine the orange juice, lime juice, honey, gingerroot, and 1 teaspoon thyme in a medium bowl.
  • Prepare a 10-inch nonstick skillet with cooking spray and heat it over medium-high heat. Season the chicken with a blend of salt and pepper. Cook the chicken in the skillet for 3 to 4 minutes, turning it once, until it is browned. Add the orange juice mixture and bring it to a boil, then reduce the heat to medium-low. Cover and cook for 8 to 10 minutes, or until the chicken is no longer pink in the center when cut. Remove the chicken from the skillet.
  • Bring the sauce in the skillet to a boil, then add the butter. Continuously stir until the butter has melted and the sauce has thickened slightly. Serve the sauce over the chicken and orange slices, then sprinkle with more thyme.
