Spicy citrus ginger garlic chicken breast.
Ingredients:
  • 3 cloves garlic, finely chopped
  • 1 tablespoon finely chopped fresh ginger root
  • 1 teaspoon chile paste
  • 0.5 cup orange juice
  • 1 tablespoon sherry
  • 2 tablespoons soy sauce
  • 2 teaspoons cider vinegar
  • 1 teaspoon white sugar
  • 2 teaspoons cornstarch
  • 2 tablespoons cold water
  • 2 tablespoons peanut oil, divided
  • 4 skinless, boneless chicken breast halves - cut into strips
  • 6 green onions, chopped into 1 inch pieces
  • 2 green bell peppers, cut into 1 inch pieces
  • 1 small onion, diced
  • 1 tablespoon grated orange zest
  • 0.33333298563957 cup finely chopped peanuts
Instructions:
  • Combine garlic, ginger, and chile paste in a small bowl. Set aside. In a separate bowl, mix orange juice, sherry, soy sauce, vinegar, and sugar. In another bowl, stir cornstarch into water until dissolved.
  • In a large skillet over medium-high heat, sizzle chicken in 1 tablespoon of oil for about 3 minutes until nicely browned. Transfer chicken to a plate and set aside.
  • Warm up a teaspoon of oil in a skillet, then toss in green onion, bell pepper, and onion. Cook for 3 minutes. Add the garlic and ginger blend and cook for another minute while stirring constantly. Introduce the chicken and orange juice mix, stir and cook for 2 minutes. Mix in orange zest and cornstarch blend. Heat it up while stirring slowly until the sauce becomes clear and thick. Top it off with peanuts and serve.
