Ingredients:
  • 10 large cherrystone clams, from sustainable sources
  • 4 large cloves of garlic
  • ½ a bunch of fresh thyme
  • 4 jarred red peppers
  • 8 rashers of higher-welfare smoked streaky bacon
  • 1 knob of unsalted butter
  • 200 g fresh white breadcrumbs
  • 1 lemon
  • extra virgin olive oil
Instructions:
  • 1. Preheat the grill to high. 2. Wash the clams under cold running water, ensuring they are tightly closed. Remove any debris stuck to the shells. 3. Slice the garlic very finely, pick the thyme, and finely slice the peppers. 4. In a deep pan over high heat, cook the clams with a splash of water until all have opened. Transfer to a tray to cool. 5. Cut each bacon rasher into thirds and cook in a non-stick pan until starting to crisp. Remove from pan and set aside. 6. In the same pan, add butter, garlic, and thyme. Once sizzling, stir in breadcrumbs until golden. Season with salt and pepper, then set aside to cool. 7. Chop the cooled clams into quarters, then toss with lemon juice, olive oil, and seasoning. 8. Clean the clam shells and arrange on a roasting tray. Fill each shell with pepper strips, breadcrumbs, clam quarters, and bacon. Drizzle with olive oil. 9. Grill on a low shelf for 4-5 minutes until everything is warmed through and golden brown. 10. Serve with lemon wedges for squeezing.
