Make flavorful chicken pad Thai using classic ingredients like fish sauce, tamarind paste, and shrimp paste. Simple and delicious homemade dish.
Ingredients:
  • 10 ounces dried rice noodles
  • 4 tablespoons brown sugar
  • 4 tablespoons soy sauce, or to taste
  • 6 tablespoons fish sauce, or to taste
  • 5 tablespoons tamarind paste
  • 2 tablespoons vegetable oil
  • 12 ounces chicken breast, thinly sliced
  • 1 (7 ounce) package firm tofu, sliced
  • 3 cloves garlic, chopped
  • 1 tablespoon shrimp paste
  • 2 tablespoons chopped spring onions
  • 0.75 cup dry roasted peanuts
  • 2 cups bean sprouts
  • 1 lime, cut into wedges
Instructions:
  • Soak rice noodles in a refreshing bath of water for 15 minutes.
  • In a bowl, mix together brown sugar, soy sauce, fish sauce, and tamarind paste until well combined. Let it sit for later.
  • In a wok over medium-high heat, heat the oil until shimmering. Add the chicken and stir-fry for 1 minute. Next, toss in the tofu and continue cooking until the chicken is cooked through, approximately 4 minutes.
  • Stir in garlic and shrimp paste in the wok. Cook for 2 minutes, then add the fish sauce mixture and drained noodles. Continue cooking until noodles are tender, about 3 to 5 minutes.
  • Create a space in the wok for the eggs, then scramble them until firm for about 3 minutes. Mix them into the noodles and serve with peanuts, bean sprouts, and lime wedges.
