Classic Christmas pudding

Elevate your holiday table with a festive Christmas pudding, adorned with sweet candied orange slices and a maple syrup drizzle.
Ingredients:
  • 700g Mixed Fruit, coarsely chopped
  • 125ml brandy
  • 2 tsp lemon rind, finely grated
  • 20.00 ml orange rind, finely grated
  • 1 green apple, peeled, coarsely grated
  • 250g butter, softened
  • 220g brown sugar
  • 60ml golden syrup
  • 4 Free Range Eggs
  • 175g breadcrumbs
  • 150g self-raising flour
  • 5.00 gm mixed spice
  • 2.50 gm ground cinnamon
  • 2.50 gm ground nutmeg
  • 110g slivered almonds
  • 110g caster sugar
  • 2 oranges, thinly sliced
  • 60ml maple syrup
Instructions:
  • In a bowl, mix together the fruit, brandy or orange juice, lemon rind, orange rind, and apple. Cover and let it soak for 2 hours.
  • In a bowl, use an electric mixer to cream together the butter and brown sugar until light and fluffy. Mix in the golden syrup. Beat in the eggs one at a time, ensuring each addition is well incorporated. Fold this mixture into the fruit. Gently mix in the breadcrumbs, flour, mixed spice, cinnamon, nutmeg, and almonds.
  • Prepare the pudding basin by greasing it, lining the base with baking paper, and dusting the sides with flour. Spoon in the mixture and smooth the surface. Cover with a 30cm square of baking paper and foil, pleating the center. Secure it in place by tying string around the top. Scrunch the paper and foil tightly around the rim of the basin.
  • Place a heatproof saucer upside down in a large saucepan. Set the pudding basin on the saucer. Pour enough boiling water in the saucepan to reach halfway up the basin. Bring to a boil, cover, and simmer for 6 hours or until a skewer inserted in the center comes out clean. Remove pudding carefully from the saucepan. Let it sit in the basin for 10 minutes before flipping it onto a serving plate.
  • 1. Preheat the oven to 100C and line 2 baking trays with baking paper. 2. In a frying pan over low heat, combine the caster sugar and 2 tablespoons of water. Stir until the sugar dissolves. 3. Add half of the orange slices and bring to a boil. Simmer until the orange rind is slightly translucent. 4. Transfer the simmered orange slices to one of the lined trays and repeat the process with the remaining orange slices. 5. Bake for 1 hour or until the orange slices are dry.
  • Garnish pudding with candied orange slices and a generous drizzle of maple syrup.
