Black Forest Christmas pudding recipe

Fusion of classic Christmas desserts to create a decadent, irresistible treat for all ages.
Ingredients:
  • 190g (1 1/4 cups) plain flour, plus 50g (1/3 cup), extra
  • 150g dark brown sugar
  • 150g glacé cherries
  • 140g (1 cup) dried sour cherries
  • 140g (2 cups, lightly packed) stale breadcrumbs
  • 125g (1/2 cup) finely chopped dried soft figs
  • 100g dark chocolate, finely chopped, plus extra, melted, to serve
  • 95g (1/2 cup) finely chopped prunes
  • 80g (1/2 cup) dried currants
  • 2 tsp finely grated orange rind
  • 2.50 gm ground cinnamon
  • 1.25 gm ground nutmeg
  • 185g unsalted butter, melted
  • 80ml (1/3 cup) kirsch (cherry brandy)
  • 2 eggs, lightly whisked
  • 21.00 gm fresh orange juice
  • Fresh cherries, to serve
  • Dark chocolate shards, to decorate (see note)
  • Dark cocoa, to dust
  • Custard, thick cream or ice-cream, to serve
Instructions:
  • Allow an 80cm square of calico to gently bathe in a generous bowl of cold water overnight.
  • In a large bowl, mix together flour, sugar, glacé cherries, sour cherries, breadcrumbs, figs, dark chocolate, prunes, currants, orange rind, cinnamon, nutmeg, melted butter, kirsch, eggs, and orange juice.
  • Take the calico from the cold water and gently squeeze out any excess water. Bring a stockpot of water to a boil. Add the calico to the boiling water. Using tongs and protective gloves, remove the calico and squeeze out the water. Lay flat on a clean work surface.
  • Sprinkle extra flour in the center of the cloth and rub into a large round, leaving a 5cm border. Transfer the pudding mixture to the center of the cloth. Gather the corners and twist the pudding into a round shape. Secure tightly with a long piece of kitchen string, letting the string overhang.
  • Carefully pour the pudding mixture into the boiling water and secure any extra string to the handles of the pot. Cover and simmer for 5 1/2 hours, adding more boiling water as needed.
  • Gently untie the string from the handles and lift the pudding out of the water. Let it hang over a bowl for 10 minutes or until the cloth looks dry. Unwrap and place on a serving platter. Drizzle with melted chocolate, garnish with fresh cherries, chocolate pieces, and a sprinkle of cocoa. Enjoy with custard, cream, or ice cream.
