Elevate Christmas tradition with a chic ham salad.
Ingredients:
  • 42.00 gm lemon juice
  • 5.90 gm Dijon mustard
  • 7.20 gm honey
  • 60ml olive oil
  • 60ml oil
  • 200g baby mixed salad leaves
  • 12 thin slices Black Forest ham, torn (see note)
  • 400g fresh cherries, pitted
  • 125ml red wine vinegar
  • 16.00 gm brown sugar
  • 6-8 whole black peppercorns
  • 1 fresh bay leaf (see note)
  • 3-4 thyme sprigs
Instructions:
  • To prepare the pickled cherries, start by washing the cherries, drying them thoroughly, and placing them in a sterilized jar. Next, combine the rest of the ingredients in a saucepan along with 1 teaspoon of sea salt flakes. Heat the mixture over low heat, stirring until the sugar is dissolved. Increase the heat to medium and simmer for 3-4 minutes until slightly reduced. Pour this mixture over the cherries in the jar. Let it cool, then cover with a lid and refrigerate for 2-3 days to enhance the flavors.
  • Combine lemon juice, mustard, honey, oils, and seasoning in a bowl. Arrange salad leaves, ham, and pickled cherries on a platter. Drizzle with dressing and toss gently before serving.
