Steamed chocolate pudding with black forest sauce

Indulgent black forest cake-inspired chocolate steamed pudding.
Ingredients:
  • 115g unsalted butter
  • 115g caster sugar
  • 85g self-raising flour
  • 2.00 gm baking powder
  • 20.00 gm cocoa powder
  • 30g almond meal
  • 20.60 gm milk
  • 1 quantity hot chocolate sauce (see related recipe)
  • Thick cream, to serve
  • 670g can pitted cherries
  • 10.00 gm arrowroot
  • 40.00 ml brandy
Instructions:
  • In the bowl of an electric mixer, combine butter and sugar until pale. Add eggs one at a time, beating well. Mix flour, baking powder, and cocoa, then add to the mixture with almond meal and milk. Stir until well combined. Spoon into a buttered 1 litre pudding basin, cover with foil, and secure with kitchen string. Place in a saucepan, add water halfway up the side of the basin, and steam for 1 1/2 hours.
  • In a saucepan, combine cherries and their juices and bring to a gentle simmer over medium heat. Mix arrowroot with brandy until smooth, then stir into the cherries. Cook for 2-3 minutes until the sauce thickens. Serve alongside chocolate sauce and a dollop of cream.
