Choc-chip pudding with jam and creme fraiche

Create a decadent chocolate chip steamed pudding to bring joy to all.
Ingredients:
  • 120g unsalted butter, softened
  • 120g caster sugar
  • 4.40 gm vanilla extract
  • 2 eggs
  • 120g plain flour
  • 60g cocoa powder
  • 8.00 gm baking powder
  • 60g dark chocolate, finely chopped
  • 330.00 gm raspberry jam, warmed
  • Creme fraiche or mascarpone, to serve
Instructions:
  • Prepare a 1-liter pudding basin by greasing it.
  • In the bowl of an electric mixer, combine butter and sugar until creamy. Mix in vanilla, then add eggs one at a time, beating well after each addition until just combined. Sift flour, cocoa, and baking powder and fold into the mixture. Adjust the consistency with about 1-2 tablespoons of water. Stir in chocolate, then transfer the mixture into a basin. Create a pleat in the center of a piece of baking paper for expansion, then use it to cover the pudding. Secure with string and cover with foil.
  • Place the basin in a saucepan with water reaching halfway up the sides. Bring to a boil over high heat, then cover and steam on low for 2 hours. Remove the basin from the pan and let it sit for 10 minutes. Unmold, slice, and serve with warm jam and creme fraiche.
