Indulgent White Christmas pudding with Caramilk chocolate and dried fruit for a festive treat.
Ingredients:
  • 225g (1 1/2 cups) plain flour
  • 125g (1 1/2 cups) fresh white breadcrumbs
  • 120g (3/4 cup) dried cranberries
  • 100g (1/2 cup) red glace cherries
  • 100g pistachio kernels
  • 180g pkt white chocolate, chopped
  • 175g salted butter, chopped, at room temperature
  • 125ml (1/2 cup) sweetened condensed milk
  • 100g (1/2 cup) caster sugar
  • 180g Caramilk chocolate or white chocolate, melted, cooled
  • Vanilla custard, to serve
Instructions:
  • Prepare a 2L (8 cup) ceramic pudding basin by greasing it and lining the base with baking paper.
  • Combine in a large bowl: flour, breadcrumbs, cranberries, cherries, pistachios, and chopped white chocolate.
  • In a bowl, use an electric beater to mix butter, condensed milk, and sugar until pale and creamy. Add the eggs one at a time, beating well after each addition. Mix in melted chocolate until well combined. Then, gently stir the butter mixture into the flour mixture using a wooden spoon until fully combined.
  • Transfer mixture to the prepared pudding basin. Cover with a sheet of baking paper, followed by a sheet of foil, ensuring the paper overhangs the sides by 3-4cm. Secure tightly with a rubber band or kitchen string. Place the basin in a large saucepan and pour boiling water into the saucepan to reach three-quarters up the side of the basin. Cover and cook on low heat for 4 hours, adding water as needed, until a skewer comes out clean when inserted into the center. Let it sit in the basin for 15 minutes to cool slightly before unmolding onto a serving plate.
  • Enjoy with luscious vanilla custard.
