Christmas Pudding Martini: Simmer water, golden syrup, sultanas, and cinnamon. Let cool, then mix with glace fruit and white chocolate for a festive cocktail.
Ingredients:
  • 125ml (1/2 cup) golden syrup
  • 90g (1/2 cup) sultanas
  • 1 cinnamon stick
  • Ice cubes, to shake
  • 50g white chocolate, melted
  • 4 green glacé cherries
  • 2 red maraschino cherries, stems removed
  • 125ml (1/2 cup) gin
  • Pouring cream, to serve
  • Ground nutmeg, to sprinkle
Instructions:
  • In a saucepan, combine golden syrup, sultanas, a cinnamon stick, and 250ml (1 cup) water. Stir over low heat until fully mixed. Increase heat to medium and bring to a simmer. Simmer uncovered for 12-13 minutes until thickened to about 200ml. Strain the syrup (keep sultanas, discard cinnamon). Allow to cool for 1 hour.
  • Carefully decorate the rims of two martini glasses with a luxurious white chocolate drizzle. Then, thread two glacé cherries and one maraschino cherry of different colors onto two skewers, alternating for a visually stunning presentation.
  • Combine the ice, golden syrup mixture, and gin in a cocktail shaker. Shake vigorously for 30 seconds and strain into a glass over a touch of cream. Finish with a sprinkle of nutmeg and garnish with cherry skewers.
