Plum pudding truffles recipe

Make charming mini plum pudding truffles ahead for Christmas, store in fridge.
Ingredients:
  • 200g dark chocolate
  • 80ml thickened cream
  • 100g Iced Fruit Cake Slice, icing removed, cake crumbled
  • 1.25 gm mixed spice
  • 200g milk chocolate melts, melted
  • 50g white chocolate melts, melted
  • Red and green Mars M&M’s Minis, to decorate
Instructions:
  • In a large heatproof bowl set over simmering water, melt the chocolate with the cream, stirring with a metal spoon until smooth. Take the bowl off the heat and mix in the fruit cake and mixed spice. Cover with plastic wrap and chill in the fridge for 2 hours until firm.
  • Prepare a baking tray by lining it with baking paper. Shape 2-teaspoon portions of the mixture into balls and place them on the prepared tray. Chill in the fridge for 1 hour to firm up.
  • Melt the milk chocolate in a small bowl. Dip each truffle into the chocolate using a fork, tapping off any excess. Place them on a lined tray. Allow them to set before serving.
  • 1. Put the white chocolate in a sealable plastic bag and snip off a corner. Drizzle some white chocolate over each truffle, then garnish with M&M’s. Allow to set for 30 minutes.
